Comfort food makes me happy

Chicken and asparagus brown rice risotto with cardamom. Its like chicken soup for the soul.
Oh, and a big part of how good it makes me feel is that I cooked it in my own house.

Yummy.

Robbie mentioned today that he missed cooking with me- which got me to realising that I missed cooking with he and Fish. There's nothing nicer than cooking with a[nother?] foodie, the fun exchange of hints and tips, the closeness and cooperation cant help but bring you closer. Unless the other foodie is that Gordon Ramsey, of course.

I need to cook more.

Isn't anything cooking with cardamom the absolute best?
Sometimes if I'm not cooking with it, I'll brew cardamom tea and want to bathe in it. ;o)

I agree... was just going to ask you how to make it. I have made risotto many times... but this sounds really yummy. Just use regular brown rice instead of the arborio? Same risotto method (slowly adding stock, etc.)?

Funny, I've been doing more cooking lately just to keep food costs down and entertain myself.

Sunday night was a fantastic chicken souvlaki, with a passable tzatziki.

Pretty much, i just extend the initial wine/water simmer to take into account brown calrose rice's slow absorbancy. It still comes out slightly creamy, but the brown rice gives it more texture. Next time I'd consider starting with 1 cup of brown calrose and later adding half a cup of arborio, just to sticky it up a bit...

banana dumplings with cardamom- roll peeled ladyfinger bananas in cardamom and sugar until theyre nicely coated, encase in puff pastry, brush with egg and bake.
Combine it witha gin and lemon sauce (boil lemon zest in sugar water until syrupy, remove from heat and add gin and a tablespoon of lemon juice) and its yummmy...
