And in completely unrelated news, I finally figured out why the HTML 'centre' tag didnt work for me: because I was spelling 'centre' correctly. Once I changed to the spelling used by 6-year olds and Americans, it all made sense.

I made the most fantastic discovery yesterday: Duck fat, in handy plastic pouches, from the delicatessen down the road.
